If I leave these flowers on the bush, they will become elderberries; which is wonderful. But don't forget to first harvest some flowers! Each year I make sure to harvest and dry lots and lots of the flowers. They make a great tea for allergies and a wonderful eye wash for irritated eyes. Elderberry bushes are very prolific so even if you take quite a few flowers, there will still be plenty of berries. Another bonus is I don't have to fight as many bugs to get the flowers- once they ripen to berries every bug knows it!
